Quick & Easy Hollandaise



Serves 4


2 egg yolks

1 Tbsp lemon juice

1 Tsp Dijon Mustard

100g butter (melted)

Salt & pepper to taste


  1. Separate egg yolks and whisk together with lemon juice and mustard in a bowl
  2. heat 1/2 cup of water in a saucepan ( make sure the saucepan can hold the bowl with your ingredients from Step 1. )
  3. In a seperate bowl, melt butter into a full liquid substance
  4. Constantly whisking your mixture, place your bowl of ingredients from step 1. on top of the sauce pan of boiling water and slowly add your butter making sure your constantly mixing your ingredients 

5.   Add Salt & pepper to your liking

Serve & Enjoy

Hints & tips – save your egg whites for your next omelette or meringue

If your mixture starts to split, use an old Jamie Oliver trick and chuck in an ice cube to save your Hollandaise
