Feijoa & Coconut Cake

GF, DF, Vegetarian

Total time: 1 hour

Ingredients

1 cup of mashed feijoas

2 medium sized mashed bananas (roughly 1/2 cup)

2 eggs

1/2 cup of coconut flour

1 tsp of baking soda

2 tsp of baking powder

3/4 cup of desiccated coconut

3 tablespoons of coconut oil (melted)

2 tablespoons of honey or molasses ( I used molasses)

1 teaspoon of vanilla essence

Directions

  1. preheat oven to 180 degrees and grease cake tin
  2. Mash bananas and feijoas in a mixing bowl
  3. add all other ingredients
  4. bake for 40 mins until top is golden brown ensuring you let you cake cool until completely cool before removing from your tin

Note that this is a very soft cake so handle with care.

Enjoy with butter, yoghurt or cream if you’re feeling self indulgent

Hints and tips- if you’re a kiwi with an abundance of feijoas be sure to freeze them ( with skins off)  if you have an excess amount with no use.
