Cauliflower Tabbouleh

Cauliflower Tabbouleh 

GF, DF, Vegetarian 



1/2 head of cauliflower

1 cup thinly chopped parsley

1/2 cup fresh mint chopped

1 capsicum (change up your colours to make your dish brighter)

1 cup cherry tomatoes

1 cup cucumber


1/4 cup lemon juice

1/4 Extra virgin Olive oil

1 garlic clove finely diced

1/2 tsp ground cumin

Salt & pepper to season


  1. de-stalk cauliflower and blend until fine in a food processor – If you don’t have a food processor you can simply use a grater
  2. prepare all other vegetables and mix into cauliflower
  3. prepare dressing by combining all ingredients in a bowl and mix through your tabbouleh.
